First step: get a professional energy audit with blower door test. It will tell you exactly where you are losing the most air. In old farmhouses that is typically rim joists, attic air sealing, plumbing and electrical penetrations.
This is a real code issue. If you spray over Romex in an attic it may need to be re-rated. Most AHJs want wiring in conduit if it is going to be embedded in foam.
